This ancient grain is a very popular flour and is good for people who have a low tolerance for gluten. Our Sustainable Emmer is grown right here in Australia and is certified. The grain passes through a stone mill and all of the bran, germ and endosperm is retained.Emmer is an ancient wheat variety with a distinct flavour profile and different protein characteristics to modern wheat.
This is not a gluten free flour but does contain a gluten that is more easily digested than wheat. Emmer is the 2nd oldest grain, Einkorn being the oldest. It is fawn in colour and has a delightful nutty flavour. It is best suited to add to bread dough together with stronger flours rather than making a bread soley out of Emmer. It also makes beautiful pastries, biscuits and cakes.
